Meal Plan Week #27

Well, hello there, Monday before Spring Break!

We'll be in our regular routine until Friday this week and then we'll officially be on Spring Break!
Do you have any big plans for Spring Break? We thought we were going to spend a few days up at the cabin in Big Bear but now, we're not so sure. Snow or Sun? Decisions, decisions...
We may just end up staying local to soak up the fantastic weather we've been having before it gets too hot.

The kids enjoyed Jacob's birthday party this weekend.


For us adults, the pool is still too cold but all the kids had a blast. Including this little guy who asks about going into the pool every. single. day. #happyplace

Ok, so last week's favorite supper was this:

BBQ Chicken & Pineapple Baked Tacos

I make baked tacos often but these had a little twist...Pineapple! This recipe uses my Slow Cooker BBQ Chicken recipe (which is easily adaptable for these tacos by cutting the recipe in half) Also, instead of using brown sugar, I add a half can of pineapple tidbits (juice and all) to the slow cooker. Just before baking the tacos, I'll add in the other half of the tidbits. The pineapple adds a nice texture and natural sweetness. It just makes these BBQ Chicken Tacos even more tasty and fun! I also top them with jalapeno jack cheese before baking and then fresh cilantro on top. 
This would be delicious using pork as well! #porkandpineapple #yum

I don't think my family has ever been disappointed when I've said, "We're having tacos tonight."
Tacos just make everyone happy! For years, we've had them on soft corn tortillas but lately, we've also enjoyed the baked version. If you haven't tried baking your tacos yet, you must give it a try.
They are SOOOO good! #standandstuffshells
