These were the yummy sandwiches I made for Zachary’s Birthday Party. They worked out great because I made them in the crockpot the night before. All I had to do the morning was take the crock pot out of the fridge and keep it on warm until the party started. Easy peasy!
I tested this recipe on the family about a month ago and they all approved. I’m usually not a huge fan of BBQ sauce but who wouldn’t like the taste of sweet, tangy, moist, shredded chicken on a soft bun? It’s very summery, don’t you think?
I love the fact that this recipe not only feeds a crowd but it also makes an easy dinner for the family. Just add grilled corn on the cob, fresh fruit, or a salad and you’ve got some happy campers, for sure.
Or, if you’re lucky enough to have leftovers, we also turned it into BBQ Chicken Pizza. So delish!
All it takes is a little cheese, extra bbq sauce if you want it, the leftover chicken, sliced red onions, and cilantro. This is the kids’ new favorite meal over here. Yum!
You could also make BBQ Chicken Nachos or Tostadas with the leftovers. The possibilities are endless!
Shredded Honey Barbecue Chicken Sandwiches
Serves 6-10 (recipe adapted from Love Grows Wild)
- 3-5 boneless skinless chicken breasts
- one 18 ounce bottle Honey Barbecue Sauce (I use Sweet Baby Ray’s)
- 1/2 cup Italian Salad Dressing
- 1/4 cup brown sugar
- 2 Tablespoons Worcestershire sauce
Place chicken in a slow cooker. In a bowl, combine the barbecue sauce, Italian dressing, brown sugar, and Worcestershire. Pour sauce over the chicken and cover with lid. Cook 6-8 hours on low or 3-4 hours on high. Remove chicken from the slow cooker and shred using two forks. Return the chicken to the slow cooker to coat with sauce and serve on rolls.
