{No Bake} Strawberry Ice Box Cake

Look at those layers of summery goodness!
Step 1: Slice strawberries
Step 2: Whip up some homemade whipped cream.
Step 3: Call in your taste testers.
Step 4: Layer whipped cream, graham crackers, whipped cream, then strawberries (a total of 4x’s).
The top layer should look something like this.
Step 5: Chill in the refrigerator for at least 4 hours.
Step 6: Just before serving, drizzle with melted semi-sweet chocolate and add extra strawberries for garnish.
As soon as I saw this {No Bake} recipe on Pinterest, I knew it was calling my name. I made this for my family over the weekend and it was a BIG hit! I love easy recipes like this where the hardest part is having the patience to let it set before eating.
This one’s a keeper and perfect for summer get-togethers!
No-Bake Strawberry Icebox Cake
serves 8
2 pounds fresh strawberries, washed
3 1/4 cups whipping cream, divided
1/3 cup confectioners sugar
1 teaspoon vanilla
4 sleeves (about 19 ounces, or 24 to 28 whole crackers) graham crackers
Take out a few of the best-looking strawberries and set them aside for the garnish. Hull the remainder of the strawberries and slice each berry into thin slices.
With a hand mixer or in the bowl of a stand mixer, whip 3 cups of cream until it just holds stiff peaks. Add the confectioners sugar and vanilla. Whip to combine.
Spread a small spoonful of whipped cream on the bottom of a 9x13 inch baking pan, or a similarly-sized platter. Lay down six graham crackers. Lightly cover the top of the graham crackers with more whipped cream, and then a single layer of strawberries. Repeat three times, until you have four layers of graham crackers. Spread the last of the whipped cream over the top and swirl it lightly with a spoon. Add a few more strawberries.
Refrigerate for at least 4 hours.
Melt some semi-sweet chocolate chips and drizzle over the top. Garnish with additional berries.
