Chewy Coconut Granola Bars

Can you believe the outrageous price of a good granola bar? I'm done paying up for something I can make myself. I found a recipe with simple wholesome ingredients, yummy flavor and great texture. Plus, it's super cheap to make! Plus, my kids like them way better than the store bought ones!
Whether you're planning a hike, a drive, a stroll, a trip to the beach, or any other outing this weekend, go ahead and whip up a batch of these. Your wallet and your tummy will thank you.
Chewy Coconut Granola Bars
2 cups rolled oats
3/4 cup packed brown sugar or 3/4 cup Sucanat
3/4 tsp. cinnamon
1/4 cup ground flax seed or wheat germ (or both)
1 C whole wheat flour
3/4 tsp. salt
1/4 cup shredded coconut
1/2 cup honey
1/4 cup apple sauce or 1 beaten egg
1/2 cup coconut oil
2 tsp. vanilla extract
preheat oven to 325 degrees
Mix together first 7 ingredients, then make a well in the center and add honey, apple sauce, oil and vanilla. Mix well and pat evenly into a greased 9x13 baking dish.
Bake for 30-35 mins. Then cool for 5 mins. before cutting into bars. Let cool or eat warm. Delish! Makes 16 bars.
