Here's that yummy slow cooker Pork Chili Verde recipe I mentioned in my last post. Enjoy!
Pork Chili Verde
Ingredients:
EVOO
1/2 cup onion
3 garlic cloves minced
3 lbs. pork shoulder (or pork butt)
2 jars of any green salsa (I use TJ's Salsa Verde)
1 can Rotel (I used mild)
1/2 tsp. cumin
Directions:
1. Heat the oil over med heat.
2. Cube meat into 2 inch chunks and trim off all the fat.
3. Brown meat until brown on the outside. Transfer to slow cooker.
4. Sautee onions and garlic, then transfer to slow cooker as well.
5. Add 2 jars of Salsa Verde
6. Add one can of Rotel
7. Add 1/2 tsp. cumin.
8. Stir, cover, and cook on high for 3 hours. Reduce setting to low and cook for 4 more hours.
9. Rinse a can of cannellini or pinto beans and stir gently through 20-30 mins. before serving.
Serve with cilantro, chopped onions, radish, diced avocado, or sour cream. And don't forget the lime!
