Well, helloooo Monday!
The stand out from last week's meal plan was this soul satisfying soup!
We love our soups around here. Soup is just so comforting, isn't it? It's definitely what I call "soul food."
I made this on Tuesday night. The night Morgan was headed to Steak & Study (Men's Fellowship at church). Yes, the men actually do grill up steaks and study the Word. What a great concept, right? Anyhow, he had a few minutes before he left and wanted to know what we were having for dinner so I gave him a small appetizer sized bowl of this soup and he thought it was SO good!
This soup has already made a permanent place in our family's recipe book. I love how EASY it was to make! Plus, I used rotisserie chicken so it came together in about 15 minutes from beginning to end! Can't beat that! Everyone in my family is crazy about tortellini so this was just a no brainer. It's like a modern twist on good ole chicken noodle soup. And the squeeze of lemon and parmesan at the end is a must!
We've got a busy week coming up. Co-op starts today (for the next 8 weeks) so half our Mondays are full of fun and fellowship. Needless to say, I need easy but tasty meals to prepare like never before.
