Cookies in her favorite color… PINK!!
A couple of weeks ago, we made these pink Strawberry Cake Cookies. They were the perfect festive treat for Valentine’s week. We enjoyed some with our tea and shared the rest with our neighbors.
Baking is definitely not my forte but these were a synch to make. They turned out soft, moist and not too sweet but definitely sweet enough. As most cookies are, they were fantastic warm, right out of the oven!
Strawberry Cake Cookies

Ingredients
- 1 box of strawberry cake mix (or red velvet, if you prefer)
- 8oz cream cheese, softened
- 1 stick of butter, softened
- 1 egg
- 1 tsp vanilla
- powdered sugar
- Mix cream cheese and butter until well blended. Beat in the egg. Add vanilla and cake mix. Cover and chill in the freezer for about 20 minutes. Roll into balls, then roll in powdered sugar. Place on cookie sheet about 2 inches apart. Bake at 350 degrees for 12 minutes.
I’m also thinking these would be super yummy using a lemon cake mix and fresh lemon zest!
